Our love for the old world's rustic frizzantes and vibrant, terroir-driven traditional method wines led us to bridge two traditions in the cellar. Combining ancestral method techniques with modern winemaking, this Willamette Valley sparkler is a "pet-not" style all our own — part pétillant naturel, part méthode traditionnelle — pouring a bright yellow hue with fizzy exuberance.
Tasting Notes
- Aromas of ripe yellow apple, grapefruit, melon, and bruised pear with subtle toasted almond, honeysuckle, and cheese rind
- Flavors of apple cobbler, key lime, and lemon meringue with herbal hints of verbena and geranium and a note of nutty marzipan
- Rustic and dry, with bright but balanced acidity, notable texture, and a long sweet-and-sour finish of fruit, herbs, and minerals
Serve well-chilled.
